皮蛋 pídàn dialect = 松花蛋 sōnɡhuādàn 皮蛋Preserved eggs, usually duck eggs, covered with a paste of salt, quicklime, tea and ash, then rolled in rice husks and sealed in an earthenware jar for 15-20 days. After the process is completed, the egg white has set to a dark-brown jelly-like consistency, and the egg yolk has become dark-green and creamy in texture. Preserved eggs can be eaten with chopped ginger and chives, soy sauce and vinegar. |
